    That really isn’t “crema”, either of the pump-machine variety, nor of the Brikka variety. Crema is produced under more pressure than you can get with the Moka Express and it’s various imitators. When the Moka is poured into the cup, you’re left immediately with strong, black deliciousness, not espresso-with-crema. Bialetti’s Brikka WILL give you crema with the flavor boosted, but this is apparently considered “faux crema” by purists. Brikka crema lingers in the cup, and tastes great, so what’s the diff?
